I am truly shocked - that is a French Partridge! What is wrong with Perdix perdix - less flashy but English and tastes better!
Sorry, no idea about the nationality or taste of partridges...
Partridges, I can assure you, taste very good in a rich red wine sauce, but are still an acquired taste.
I have not acquired it and hate pulling out the shotgun pellets from between my fillings.
